Baked Apple & Raisin Rice Pudding

Baked Apple and Raising Rice Pudding - A Healthy Kids Dessert

Here’s another one of Erich’s childhood favourites that his grandmother used to bake.

I personally prefer any sort of sweet pudding for dessert or for tea. However, with this being a quite nutritious meal in itself, it could also be enjoyed as a main course after maybe a small bowl of vegetable soup. My boys definitely will, while I stick to the soup!

Portions: 4-6 portions (1 baking dish)
Cooking time: 20 minutes preparation + 45 minutes baking

What's in it: Eggs provide protein and iron. Apples and raisins are a good source of Vitamin C which helps absorbing iron and supports a healthy immune system.

  • 1 cup rice
  • 3 cups full fat milk
  • 1 tablespoon vanilla sugar
  • 3 tablespoons brown sugar
  • 2 large (3 small) eggs
  • 1 tablespoon plain flour
  • ½ teaspoon cinnamon
  • 3 apples
  • ½ cup raisins
  • Juice of ½ lemon
  • Unsalted butter for greasing

  1. Place rice and milk in a saucepan and bring to boil, then cover with a lid and reduce to lowest heat. Occasionally stir and simmer gently until the rice is soft and has absorbed most the milk. Turn off heat and set aside to cool down.
  2. Meanwhile, peal and slice apples, sprinkle them with lemon juice and season with cinnamon. 
  3. Preheat oven to 180ºC.
  4. Separate eggs into two bowls. Add sugar to the egg whites and whisk the egg whites until they’re standing in stiff peaks. 
  5. Add cooled rice and flour to the egg yolks and mix in raisins.
  6. Slowly add the beaten egg whites to the rice mixture.
  7. Pour a layer of the mixture into a buttered baking dish, followed by a layer of apples and raisins, and again, a layer of the rice mixture.
  8. Bake in the oven for 45 minutes. 
  9. Allow to cool and set for a few minutes before serving. Serve hot, warm or at room temperature.

Adult version: If you have rum at home, try soaking the raisins before adding them to the mixture.

Suitable for freezing and re-heating.
