Cream Spinach Pasta

A lovely green dish - Using Radiatore pasta makes sure the spinach goes in too!




Portions: 2 adults + 1 child
Cooking time: 20 mins

What's in it: Vitamin B, C, K, folic acid, iron, calcium and potassium
Ingredients:
  • 250 g Radiatore or Fusilli Pasta
  • 1 tablespoon butter
  • ½ onion finely chopped
  • 2 garlic cloves finely chopped
  • ½ cup of milk
  • 2 tablespoons plain flour
  • 1 bag of fresh spinach or 400g frozen
  • Pinch of salt, white pepper and nutmeg
  • Grated Parmesan or Cheddar
Preparation:
  1. Cook pasta according to pack instructions
  2. Melt butter in a large saucepan and add onions and garlic.
  3. Before butter turns brown stir in flour
  4. Using a whisk, add the milk slowly to avoid lumps
  5. Add spinach and cook until soft
  6. Puree the mixture using a hand mixer
  7. Season with salt, pepper and grated nutmeg
  8. Add pasta to the sauce and serve immediately with grated cheese
Adult version: just add more salt and Parmesan cheese.

Not suitable for freezing.
