Fruity Chocolate Sandwich

A light chocolate treat with plenty of fruit.

Portions: 8 small desserts
Cooking time: 25 minutes
What's in it: Plenty of fruit with lots of vitamins combined with calcium from crème fraȋche.

Ingredients:
  • 2 eggs
  • 4 tablespoons caster sugar
  • 6 tablespoons plain flower
  • 1 ½ tablespoons cocoa powder
  • 1 pot of half-fat crème fraȋche
  • ½ lemon
  • 1 teaspoon of icing sugar
  • Plenty of fruit e.g. strawberries, bananas, raspberries
Preparation:
  1. Preheat oven to 220ºC / 425ºF / Gas mark 7.
  2. Line 2 baking trays with baking paper
  3. In a large bowl, whisk together the eggs and sugar using a hand mixer. Whisk until the whisk leaves a trail when lifted from the mixture.
  4. Sift the flour and cocoa into the egg mixture and fold in using a large spoon. Don’t overmix.
  5. Drop tablespoons of the mixture onto the baking trays and spread them into round or oval shapes. Leave space between as they will spread a bit.
  6. Bake for 6-8 minutes. Allow to cool on the baking tray.
  7. Mix crème fraȋche with icing sugar and lemon.
  8. Serve with crème fraȋche and lots of fruit.
