A yummy recipe that I got from my friend Anna. Most ingredients you’ll probably already have at home. Just stock up on puff pastry and you’re ready to go.
Portions: 2 adults + 2 children
Cooking time: 15 mins preparation + 30 mins baking
What's in it: Tuna is a good source omega 3 fats, which are important for brain development. Cheese, tomatoes and spinach provide calcium, vitamin B, C, K, folic acid, iron, and potassium.
Ingredients:
- 1 block/sheet ready-made puff pastry
- ½ red onion, finely chopped
- 250g fresh spinach (or frozen)
- 1 tin tuna in olive oil (or brine)
- 2 tomatoes, seeded and chopped into cubes
- ½ block feta cheese, cut into cubes
- 2 tablespoons cream cheese or crème fraȋche
- 1 tablespoon oregano

Preparation:
- Sweat onions in a large sauce pan, add spinach leaves and stir for a few minutes. Take off heat and drain well.
- Mix all ingredients in a large bowl and season with salt, pepper and oregano.
- Preheat oven to 180ºC.
- Roll out puff pastry on a sheet of cling film using a rolling pin. Add filling and roll to a strudel using the cling film to lift the pastry.
- Place strudel on a baking tray lined with baking paper, pierce a couple of times with a fork.
- Bake for about 30 minutes until pastry is golden brown.

Toddler version: Max prefers it if I chop the spinach because he’s still got problems chewing the spinach leaves. You may also want to add the feta to only one half of the strudel to be on the save side.
Not suitable for freezing. Can be enjoyed warm or cold the next day.
