Left-over Veggie Toasties

Quick Veggie Toasties - A healthy toddler meal


Perfect for parties and picnics, or just a quick lunch or dinner. 

I’ve been making these since uni. It’s a quick and cheap meal everyone likes. And if you put lots of veg in, it’s healthy too! Just chop everything up, mix and spread it on a slice of toast. Bake. Done.




Portions: 2 adults + 2 children
Cooking time: 25 minutes

What's in it: A good combination of fibre, important minerals and vitamins.

Ingredients:
  • 6-8 slices of bread or wholemeal toast
  • 2-3 tablespoons of cream fresh or yoghurt
  • A big handful of grated cheese (any cheese leftovers will do)
  • Any herbs you may have left (parsley, basil, thyme, chives)
  • Vegetables cut into very small cubes (e.g. mushrooms, peppers, sweet corn, spring onions, tomatoes, courgettes, olives, capers)
  • Optional: 4 slices of ham, chopped or tuna

Preparation:
  1. Quickly toast bread for a few minutes
  2. Mix all other ingredients together in a bowl and season with salt and pepper
  3. Spread mixture onto bread
  4. Bake under grill with medium heat until cheese is golden brown.

Can be enjoyed hot or cold.
