Baked Potato Skins with Salmon

Family recipe for Baked Potato Skins with Salmon
Cheap and easy.

I didn’t have anything at home but potatoes, so I baked the potatoes while Max was having his nap.

Then we went out to get the other ingredients. If it has to go quickly you can just pop the potatoes in the microwave. This is a very quick and easy family meal that also looks very impressive.



Portions: 2 adults + 2 children
Cooking time: 10 minutes preparation + 1 hour baking time

What's in it: Potatoes are a good source of vitamin B6, vitamin C, copper, potassium, manganese, and dietary fiber. Baked potato is an exceptionally healthy low calorie, high fiber food provided it’s not filled with a huge amount of fat and cheese. Salmon adds some lovely flavours together with a good amount of protein and omega-3 fats.

Ingredients:
  • 3 medium sized potatoes
  • 200g lightly smoked salmon, cut into small cubes
  • Olive oil
  • Zest of 1 lemon
  • 2 tablespoons dill
  • Salt, white pepper, grated nutmeg
  • Serve with soured cream
Preparation:
  1. Preheat oven to 200ºC.
  2. Scrub potatoes thoroughly under cold water. Poke holes in the skin using a folk and place on a baking tray. Bake for 45 minutes or until soft (test with a toothpick)
  3. OR Place pierced potatoes on a microwave plate and microwave for about 10 minutes. Increase time if required.
  4. Cut the potatoes in half and scoop out the fluffy middle into a bowl. Mash it up using a folk.
  5. Add a dash of olive oil, salmon pieces, and lemon zest. Season with salt, pepper nutmeg and dill, and mix together
  6. Brush potato skins with olive oil and sprinkle with a little salt, place on a baking tray.
  7. Fill potato skins with the salmon mixture, drizzle with olive oil and transfer back into the oven.
  8. Bake for 25 minutes.
  9. Serve warm with soured cream on the side.

Adult version: Serve with green salad. Try with horseradish sauce.

Variations: This also works well with smoked mackerel.

Suitable for freezing and re-heating.
