Sweet Potato & Goats Cheese Pastries

Healthy family recipe for Sweet Potato Pastries
A Light supper, starter or snack.

Sweet potatoes don’t just taste nice but they are actually one of the healthiest vegetables out there.

Kids love them! Just make sure to use a mild cheese with this family recipe.




Portions: 2 adults + 2 children
Cooking time: 30 minutes preparation + 25 minutes baking

What's in it: Sweet potatoes are a great source of beta carotene (vitamin A) and vitamin C. Combined with dairy and herbs this makes a light and healthy dish or snack.

Ingredients:
  • 1 sheet ready-rolled puff pastry
  • 2 medium sized sweet potatoes
  • 1 eggs, lightly beaten
  • 1 pot soured cream
  • 100g mild hard goat cheese, cut into small cubes
  • 2 tablespoons pumpkin seeds or mixed seeds
  • 1 garlic clove, crushed
  • 2 tablespoons parsley, finely chopped
  • Olive oil, salt, white pepper

Preparation:
  1. Preheat oven to 200ºC.
  2. Pierce potatoes with a folk and bake for about 30 minutes. Remove from the oven and leave until cool. (This step can be done in advance)
  3. Roll out puff pastry to about 2mm thick and cut out 6 equal sized rectangles. Line a baking tray with baking paper and place the pastry on the paper.
  4. Brush pastries with egg and spread a on them a thin layer of soured cream leaving a 5mm border all around.
  5. Peel sweet potatoes and cut them into thin slices. Arrange sweet potato slices in the pastries, slightly overlapping (only about 6 slices per rectangle); keep the border clear.
  6. Season with salt and pepper and sprinkle with goats cheese and seeds.
  7. Bake for about 30 minutes or until pastry is golden brown underneath.
  8. Mix 2 tablespoons olive oil with garlic and parsley and brush pastries with this mixture when they come out of the oven.
  9. Serve sweet potato pastries with soured cream and green salad.

Adult version: sprinkle with finely chopped red chillies before baking. This makes a lovely starter to any main course!

Keeps in the fridge for 2 days. Can be enjoyed hot or at room temperature. Re-heat in the oven, not microwave.

  1. For fussy eaters, the sweet potatoes could be mashed up with the sour cream to make it look a bit more like pizza margherita.
