Sausage and Potato Casserole (Potato Goulash)

Sausage Casserole - Family recipe

Family comfort food.  

Spent the last two weeks at grandma’s house where we got spoiled with Austrian cuisine.

However, back in my own kitchen, meals have to go a bit quicker.




Portions: 2 adults + 2 children
Cooking time: 40 minutes

What's in it: Potatoes are a good source of vitamin B6, vitamin C, copper, potassium, manganese, and dietary fiber. Tomatoes and peppers are rich in Vitamins C, B and K. They are also a good source of calcium, iron and iodine. Sausages add important energy providing protein to this very healthy family meal.

Ingredients:


  • 6 quality pork sausages, sliced
  • 1 onion, chopped
  • 1 garlic clove
  • 6 medium sized potatoes, cut in bite size chunks
  • 400g tinned chopped tomatoes
  • ½ bunch fresh thyme or basil (or 1 teaspoon dried thyme)
  • 3 teaspoons mild paprika powder
  • 1 tablespoon tomato puree
  • Salt, pepper
  • Lemon zest of ½ lemon


Preparation:


  1. Start by frying onions and garlic with a few drops of olive oil until soft.
  2. Add sausages and fry until brown. Season with tomato puree, paprika powder, salt and pepper.
  3. Add chopped tomatoes and ½ cup of water and bring to the boil.
  4. Now add potatoes and lemon zest. Cover and simmer gently until potatoes are soft.
  5. Season with fresh thyme and serve in a bowl with a bread.



Adult version: Add chillies or a pinch of hot smoked paprika to spice things up.
Variation: If you’d like to add more vegetables, I’d recommend red peppers or mushrooms.

Suitable for freezing and re-heating.

  1. Very tempting recipe. I wonder if I can substitute jalapenos for the paprika to give it even more kick.

  2. I made this the other night for my family and my neighbours - it was such a hit there were no left overs to freeze!

    The recipe is easy to follow and easy to put together - even with two wee ones running about the kitchen.

    I highly recommend it!
