Tomato Soup with Polenta Dumplings

Hi, I’m back! My apologies for taking a break but somehow two kids are slightly more challenging than I thought. Little Leo is almost 3 months now and with Max back at nursery, it’s time to continue blogging.

This gorgeous tomato soup can definitely be served as a main for lunch or supper. Max and his friend couldn’t get enough of it. More Suppe, please! 

Portions: 2 adults + 2 children
Cooking time: 30 minutes

What's in it: Polenta is made of corn, so it is rich in complex carbohydrates and fiber. It’s also a good source of Vitamin B and C and magnesium. Combined with tomatoes and dairy, this makes a very light but nutritious, well balanced meal.

Ingredients:
  • 1 onion, chopped
  • ½ garlic clove, chopped
  • 1 tablespoon sugar
  • 1 litre chopped tomatoes
  • ¼ litre vegetable stock
  • 50 ml double cream
  • Fresh basil, parsley, oregano, salt and pepper
  • 150ml water
  • 150g polenta
  • 50g butter
  • 2 eggs
  • Salt, pepper and nutmeg
Preparation:
  1. In a sauce pan, fry onions and garlic with a few tablespoons of olive oil until soft but not brown.
  2. Add chopped tomatoes and herbs. Season with salt and pepper, cover and cook gently for a few minutes.
  3. Bring water to the boil and gradually add the polenta flour while constantly whisking.
  4. Add butter and reduce heat. Keep stirring and set aside as soon as the polenta has absorbed the water.
  5. Set aside. When the polenta is only hand warm, add eggs and season with salt and nutmeg.
  6. Bring a large pot of lightly salted water to the boil.
  7. Form little polenta dumplings using two dessert spoons and boil them in the water.
  8. The dumplings will be cooked when they rise to the surface.
  9. Blitz tomato soup using a hand blender. Reheat and add double cream.

Suitable for freezing and re-heating.
