Here’s another really easy and healthy blueberry muffin recipe. They are very moist and delicious with a crunchy crust and make a great breakfast, healthy snack or dessert.  |
Portions: 12 muffins
Cooking time: 10 mins + 30 mins baking
What's in it: Boosting your dietary fibre intake will help to maintain normal blood sugar levels and a healthy digestive system. Bananas and blueberries add important vitamins and will make up for at least 1 of your five-a-day.
Ingredients:
- 2 ripe bananas, mashed with a folk
- 1 egg
- 75g rapeseed oil (or light olive oil)
- 284ml carton buttermilk
- 200g wholemeal flour (I use wholemeal spelt flour)
- 100g plain flour (or white spelt flour)
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 100g brown sugar
- 180g blueberries (fresh or frozen)
- 3 tablespoons brown sugar for sprinkling
- 12 muffin cases
Preparation:
- Preheat oven to 180ºC.
- Mix together all dry ingredients in a large bowl.
- Quickly whisk together all wet ingredients (eggs, oil, buttermilk, bananas)
- Add wet mixture to dry mix and quickly fold until smooth. Don’t overdo it!
- Gently fold in the blueberries.
- Using a spoon divide mixture into muffin cases and sprinkle with brown sugar.
- Bake for 25-30 minutes. Add 15 mins baking time if using frozen blueberries. The muffins should be golden brown on top.
- Leave muffins in the form for a few minutes before moving them onto a cooling rack.
Suitable for freezing.
