Mini Tuna and Spinach Muffins


A tasty but healthy snack. These delicious savoury muffins are perfect for children’s parties or picnics.

They are a slightly healthier alternative to sausage rolls and sandwiches.  


Portions: 2 adults + 2 children

What's in it: Tuna is a good source omega 3 fats, which are important for brain development. Cheese  and spinach provide calcium, vitamin B, C, K, folic acid, iron, and potassium.

Ingredients:
  • 1 pack pre-rolled puff pastry (or short crust pastry)
  • 1 tin tuna steaks in oil
  • ½ leek, finely sliced
  • 300g frozen chopped spinach
  • 1 handful grated Parmesan cheese
  • ½ cup milk
  • 2 eggs
  • Salt, pepper, nutmeg
     
Preparation:
  1. Preheat oven to 180ºC. 
  2. Defrost spinach using a microwave. Squeeze out liquid using your hands.
  3. Gently fry leek in a few drops of olive oil until soft.
  4. In a large bowl, mix together tuna, spinach and leek. Season with salt, pepper and nutmeg.
  5. Mix together milk, eggs and parmesan cheese.
  6. Roll out puff pastry, cut out circles using a drinking glass. Place pastry in a muffin tray.
  7. Put a spoon of tuna mixture on each pastry and fill up with the egg mixture.
  8. Bake for 25-30 minutes.
  9. Serve hot or cold.




Adult version: This is also very nice with feta cheese and can be served warm with green salad.

Suitable for freezing and re-heating.
