Vegetable Lasagne

Vegetable Lasagne - A healthy family recipe

The picture might not look as appealing but this lasagne really tastes very nice, you wouldn’t even miss the meat.

I’ve chopped the vegetables really small so that my kids can’t pick them out and it worked!



Portions: 4 adults
Cooking time30 mins prep + 1 h baking

What's in it: This is a great meal full of vitamins. Gram flour is made of chickpeas, which adds protein and iron to this dish. Cheese provides calcium, which is essential for strong bones.

Ingredients:
  • 2 courgettes, small cubes
  • 1 large aubergine, small cubes
  • ½ leek, chopped
  • 4 ripe tomatoes, sliced
  • Fresh basil
  • 125g  mozzarella cheese
  • 1/2 pack lasagne sheets
  • 2 tins chopped tomatoes
Cheese sauce:
  • 75g unsalted butter
  • 100g gram flour
  • 2 pints milk
  • 200g  Cheddar cheese, grated

Preparation:
  1. Preheat the oven to 190C. 
  2. Brush the inside of a large baking dish with a little oil.
  3. For the vegetable stew, gently fry chopped onions, add courgette and aubergine cubes and fry for a few minutes. Add chopped tomatoes and season with salt, pepper and fresh basil.
  4. For cheese sauce, melt butter in saucepan. Add gram flour. Then slowly whisk in milk. Add cheese, season with salt, pepper and nutmeg.
  5. Layer vegetable stew and lasagne sheets with cheese sauce in between and with a layer of tomatoes on top. Sprinkle with mozzarella cheese.
  6. Cover with foil and bake for 50 minutes. Remove the foil and bake another 10 minutes until the cheese golden on top.

Suitable for freezing and re-heating.
