Salmon & Broccoli Tagliatelle

A classic combination. “More, more, more!” 
We had it again last night and Max couldn’t get enough of it.

Portions: 2 adults + 2 children
Cooking time: 15 - 25 mins depending on pasta

What's in it: A good source of Omega 3 fats, Vitamin D as well as calcium.
Ingredients:
  • 500 g fresh/250 g dried egg tagliatelle (fettuccine or pappardelle)
  • 2 salmon fillets, cut in large cubes
  • 1 medium broccoli, cut in small florets
  • ½ leek, chopped
  • 1 handful parsley
  • ½ pot half-fat crème fraȋche
  • 1 scoop cream cheese
  • 1 tablespoon vegetable stock granule/cube
  • Salt, white pepper, lemon zest
Preparation:
  1. Cook pasta according to pack instructions and add broccoli florets for the last 4 minutes of cooking time, drain together.
  2. In a wok or large frying pan, gently fry the leeks with a bit of olive oil until soft but not brown.
  3. Add crème fraȋche, cream cheese, ½ cup of water. Season with salt, pepper, lemon zest and veg stock and bring to the boil.
  4. Add salmon cubes and simmer gently for about 5 mins.
  5. Add parsley, followed by cooked pasta and broccoli.
  6. Mix together carefully and serve as soon as possible.
Toddler version: For little Max, I usually separate pasta, broccoli and salmon on the plate and cut the pasta. It makes it much easier for him to eat with a folk.

Not suitable for re-heating.
