This is a great light supper for the whole family. In future, I will just save a few spoons before seasoning and mash them up for baby Leo. |

Hi, I’m back! My apologies for taking a break but somehow two kids are slightly more challenging than I thought. Little Leo is almost 3 months now and with Max back at nursery, it’s time to continue blogging. This gorgeous tomato soup can definitely be served as a main for lunch or supper. Max and his friend couldn’t get enough of it. More Suppe, please! |

Boiled Beef with Root Vegetables and Fried Potatoes
| Definitely worth the effort I used to cook this quite a lot because it’s very quick to prepare and can be cooked the night before. Max had it for the first time today and he really loved all of it. You’ll also get a lovely beef stock, which we usually have as a beef noodle soup the following day. |

Celeriac & Apple Soup
| I’m not a huge fan of celeriac and to be honest, I usually only buy it if I need it for stock or a stew. But this is actually a really lovely soup that could be served in a restaurant. I think Max loved it because of the sweet taste from the apple. |

Danish Buttermilk Soup
| "kammerjunkere und koldskal" Don’t ask me how to pronounce this. My friend Ingrid sent me this great buttermilk recipe. It’s a simple and delicious idea for breakfast, afternoon snack or dessert. I really do recommend baking the biscuits but you can also use all butter biscuits if time is precious. |

Coconut Chicken Soup
A yummy low fat meal with plenty of veg and lovely tender chicken. It’s quick and easy, and can be prepared in advance and cooked fresh in no time.

Ribollita
Beans, tomatoes and spring greens combined with plenty of garlic and olive oil, what a feast! You may even want to double the quantities as this is a great one for freezing.

Quick Minestrone Soup
A great dish for lazy no-meat days! It’s almost as quick as heating a ready meal and great for using up left over vegetables.
