Green and Yellow Chicken Fried Rice

Chicken Fried Rice Recipe

It had to go really quick today. And because Max has been a bit unwell and not eating much for the last few days I wanted to make sure that I cook something he’ll definitely eat.

So I just chucked in his favourite veg, which I always have in the freezer anyway – sweetcorn and peas.

Mozzarella-Stuffed Chicken Breasts with Crispy Polenta Slices

A simple but tasty idea for chicken fillets. It can be prepared in advance during naptime and cooked later.

I also find that polenta is a perfect side for toddlers and a great alternative to rice or pasta. It’s tasty, easy to digest and not too messy to eat.

Chicken & Aubergine Ragout with Couscous

Family Recipe for Chicken and Aubergine Ragout
I just love aubergines, especially when they are all sloppy. This lovely ragout can be served over pasta, baked potatoes or, like I did it this time, with couscous.

The raisins add some sweetness, which kids will love. Well, Max definitely did!

All-in-One Roast Chicken & Mushroom Rice

Family recipe for roast chicken and mushroom rice
This is proper comfort family food.

Soft chicken with a lovely crusty skin and super tasty sticky rice, yummy! Don’t get put off by the amount of garlic that goes into it. You’ll be surprised how tasty it is.

We had it with brown rice this time. Use white rice if you don’t have time to  soak it overnight. Brown rice without soaking doesn't work.

Left-overs Egg Fried Rice

recipe for egg fried rice
A great idea for left-over roast chicken and vegetables.

It’s a very basic dish that works with only a few ingredients. I usually put in fried egg, which makes it tastier and slightly more authentic.

Mild Chicken Korma

A mild aromatic curry

This is the perfect family meal! We love the sweet and savoury flavours combined with the almonds and coconut giving the sauce a rich nutty texture.
It’s quick and easy and most importantly, it’s free from artificial colours and preservatives.

A yummy low fat meal with plenty of veg and lovely tender chicken. It’s quick and easy, and can be prepared in advance and cooked fresh in no time.

Sweet & Sour Chicken

Full of flavours and vitamins and low fat.
This is my personal favourite when it comes to homemade Chinese.
