I know that the Austrian asparagus season is almost over but my friends cooked this for us the other day. It was simply delicious and is definitely worth a try. I’m just blaming the lovely weather for not posting it earlier. |

I found that this is a perfect dinner for all my boys. Leo with his 8 months can grab a whole piece. He loved them so much that he had two of them last time... and we had a good night as a result! Max wasn’t too keen on the raw carrots so he had some peas with it, and I admit – some ketchup too. |

Spinach, Mushroom & Cheese Pancakes (Palatschinken)
| This is one of my personal favourites that I grew up with. My mum makes them with creamed spinach and cheese, which is really quick because in Austria Birdseye actually do frozen creamed spinach. However, I find my UK version equally delicious. Give it a try. If your kids refuse to eat spinach, there’s always the option to amend the filling slightly according to personal taste. |

Mild Courgette and Fish Curry

This is a delicious curry that Max will eat every time. We have fish every weekend after our weekly visit to Borough Market on Saturday. This time our fish monger recommended Huss for our curry, which was delicious because it’s so soft. I usually use Pollock or Coley because they are not overfished and cheap. |

A classic vegetarian dish that is delicious on its own, with a salad or as a side with a red meat. Max had to get used to the taste of Swedes but when we had it a second time he was totally up for it. |

Green and Yellow Chicken Fried Rice

It had to go really quick today. And because Max has been a bit unwell and not eating much for the last few days I wanted to make sure that I cook something he’ll definitely eat. So I just chucked in his favourite veg, which I always have in the freezer anyway – sweetcorn and peas. |

Miso Baked Salmon with Coconut Rice and Coriander Sauce

Miso paste is a really good ingredient to have in your fridge. I also use it for quick Ramen soups but Miso baked salmon is by far my favourite. I’m always surprised how quick and easy this is. |

Left-over Veggie Toasties

Perfect for parties and picnics, or just a quick lunch or dinner.
I’ve been making these since uni. It’s a quick
and cheap meal everyone likes. And if you put lots of veg in, it’s healthy too! Just chop everything up, mix and spread it on a slice of toast. Bake. Done.

Little Leo is almost 3 months now and with Max back at nursery, it’s time to continue blogging. This gorgeous tomato soup can definitely be served as a main for lunch or supper. Courgette Pasta Carbonara
| Quick and simply delicious. I’ve always loved spaghetti carbonara and to be honest, courgette is just as nice as bacon with this lovely creamy sauce. Kids love pasta, egg and cheese, so mixing it together and hide some veg in it seems like a good idea. |

| Spanish omelette my way. An omelette is a quick and easy way out if you don’t know what to cook, assuming you’ve got potatoes and eggs in your fridge. With asparagus being in season this is a quick and easy idea for lunch or dinner after a busy day out. |

Quick Ebly and Vegetable Stir-fry
| The perfect dish for sunny days. Ebly is a brand name for Durum Wheat. You can buy it from Waitrose or Ocado. It looks like pearl barley but actually tastes more like pasta. Ebly takes only 10 minutes to cook and contains more nutrients than pasta. It’s simply great and kids love it! |

Celeriac & Apple Soup
| I’m not a huge fan of celeriac and to be honest, I usually only buy it if I need it for stock or a stew. But this is actually a really lovely soup that could be served in a restaurant. I think Max loved it because of the sweet taste from the apple. |

| A Light supper, starter or snack. Sweet potatoes don’t just taste nice but they are actually one of the healthiest vegetables out there. Kids love them! Just make sure to use a mild cheese with this family recipe. |

Baked Potato Skins with Salmon
| Cheap and easy. I didn’t have anything at home but potatoes, so I baked the potatoes while Max was having his nap. Then we went out to get the other ingredients. If it has to go quickly you can just pop the potatoes in the microwave. This is a very quick and easy family meal that also looks very impressive. |

| Veal has a subtle flavour and fine texture, which makes it perfect for family meals right from the beginning. Add carrots, sage, parsley and white wine and you’ll get an amazing pasta sauce. I’ve already stocked up my freezer. |

| A great idea for left-over roast chicken and vegetables. It’s a very basic dish that works with only a few ingredients. I usually put in fried egg, which makes it tastier and slightly more authentic. |
