Salmon and spinach are a great combination and it couldn’t be any easier
to turn them into something delicious. Little enamel pie dishes are perfect for
children’s portions and will also give your meal a nice touch when cooking for
friends, however a larger dish works just as well.
Get the kids involved
helping you to decorate the pie. All you need is extra pastry and some cookie
cutters or knifes. Not sure if I should tell you this but I actually found our
fish shape in Max’s play dough tools.

I took these little eggy muffins to a picnic on our local playground last week. Max was too busy going down the slide that day; however the other children and their mums really seemed to enjoy them. They are easy to make and are great for breakfast, lunchboxes or party food. |

Spinach, Mushroom & Cheese Pancakes (Palatschinken)
| This is one of my personal favourites that I grew up with. My mum makes them with creamed spinach and cheese, which is really quick because in Austria Birdseye actually do frozen creamed spinach. However, I find my UK version equally delicious. Give it a try. If your kids refuse to eat spinach, there’s always the option to amend the filling slightly according to personal taste. |

Swede and Potato Bake

A classic vegetarian dish that is delicious on its own, with a salad or as a side with a red meat. Max had to get used to the taste of Swedes but when we had it a second time he was totally up for it. |

It had to go really quick today. And because Max has been a bit unwell and not eating much for the last few days I wanted to make sure that I cook something he’ll definitely eat. So I just chucked in his favourite veg, which I always have in the freezer anyway – sweetcorn and peas. |

Miso Baked Salmon with Coconut Rice and Coriander Sauce

Miso paste is a really good ingredient to have in your fridge. I also use it for quick Ramen soups but Miso baked salmon is by far my favourite. I’m always surprised how quick and easy this is. |

I’ve been making these since uni. It’s a quick
and cheap meal everyone likes. And if you put lots of veg in, it’s healthy too! Just chop everything up, mix and spread it on a slice of toast. Bake. Done.

It’s just as quickly done as it will be eaten. Let the kids help. It’s great fun to put the apple slices on the pastry and watch mummy (or daddy) flipping over the finished cake. |

Steak Tortilla Wraps

We loved this. In our case, mum and dad usually got a delicious steak wrap while little Max enjoyed my simplest and quickest version of pizza. However, it didn’t take long until Max started picking out the steak from our wraps. They grow up so quickly! |

Oven-baked Spring Rolls
| My spring rolls could also be called mini pork and cabbage strudels. By grating the cabbage I make it almost invisible, which is great for fussy eaters. They are full of flavour, not at all greasy and simply delicious. |

Courgette Pasta Carbonara
| Quick and simply delicious. I’ve always loved spaghetti carbonara and to be honest, courgette is just as nice as bacon with this lovely creamy sauce. Kids love pasta, egg and cheese, so mixing it together and hide some veg in it seems like a good idea. |
