Salmon & Spinach Pie

Salmon and Spinach Pie - A healthy family recipe

Salmon and spinach are a great combination and it couldn’t be any easier to turn them into something delicious. Little enamel pie dishes are perfect for children’s portions and will also give your meal a nice touch when cooking for friends, however a larger dish works just as well.

Get the kids involved helping you to decorate the pie. All you need is extra pastry and some cookie cutters or knifes. Not sure if I should tell you this but I actually found our fish shape in Max’s play dough tools.

Mushroom, Ham & Cheese Mini Frittatas

Mushroom Ham and Cheese Frittatas

I took these little eggy muffins to a picnic on our local playground last week. Max was too busy going down the slide that day; however the other children and their mums really seemed to enjoy them.

They are easy to make and are great for breakfast, lunchboxes or party food.

Asparagus Polenta Bake

Asparagus Polenta Bake - Healthy Family Recipe

I know that the Austrian asparagus season is almost over but my friends cooked this for us the other day. It was simply delicious and is definitely worth a try.

I’m just blaming the lovely weather for not posting it earlier.

Blueberry Pie

Blueberry Pie - Healthy Family Dessert

Erich wants, Erich gets. This pie is the answer to the question “what shall I do with the blueberries in the freezer?”

It was simply delicious. Max and I couldn’t even wait until it had cooled down and I could just about stop myself from getting the vanilla ice cream out.

Cheesy Salmon and Broccoli Pie

Cheesy Salmon and Broccoli Pie - Healthy Family Recipe

I’m not usually a fan of combining fish with cheese but in this case I think it really works.

My boys really enjoyed this tasty mush but, of course, mash and broccoli could also be served separately if preferred.

Vegetable Lasagne

Vegetable Lasagne - A healthy family recipe

The picture might not look as appealing but this lasagne really tastes very nice, you wouldn’t even miss the meat.

I’ve chopped the vegetables really small so that my kids can’t pick them out and it worked!

Swede and Potato Bake

Swede and Potato Bake - A healthy toddler dinner

A classic vegetarian dish that is delicious on its own, with a salad or as a side with a red meat.

Max had to get used to the taste of Swedes but when we had it a second time he was totally up for it.

Traditional Apfelstrudel

Traditional Apfelstrudel Recipe - Healthy dessert

Erich’s favourite Austrian dessert. There's not really anything new here for my friends at home. However, I thought I’ll post it anyway because it’s just such a delicious and healthy treat.

To all my non-Austrian friends out there, you really must try this, it's easier than it looks!

Ham and Mushroom Pasta Bake

Ham and Mushroom Pasta Bake

This is a slightly healthier version of an Austrian family favourite.

The recipe is for four but I think Erich and I could probably finish it, just because it’s so nice!

Upside-down Apple Tart (Tarte Tartin)

Tarte Tartin Recipe

It’s just as quickly done as it will be eaten.

Let the kids help. It’s great fun to put the apple slices on the pastry and watch mummy (or daddy) flipping over the finished cake.

Oven-baked Spring Rolls

My spring rolls could also be called mini pork and cabbage strudels. By grating the cabbage I make it almost invisible, which is great for fussy eaters.

They are full of flavour, not at all greasy and simply delicious.

Seriously Good Banana & Blueberry Muffins

Here’s another really easy and healthy blueberry muffin recipe.

They are very moist and delicious with a crunchy crust and make a great breakfast, healthy snack or dessert.

Mini Tuna and Spinach Muffins

A tasty but healthy snack. These delicious savoury muffins are perfect for children’s parties or picnics.

They are a slightly healthier alternative to sausage rolls and sandwiches.

Baked Apples with Vanilla Ice Cream

Definitely one of our family favourites this winter.

I love it when the flat is filled with this lovely warm Christmassy scent of apples and cinnamon. And when Max is sitting in front of the oven to wait for his favourite winter treat.

Wholemeal Pumpkin Seed Crackers

Wholemeal Pumpkin Seed Crackers
A healthy snack. Enjoy on its own, with a slice of cheese or a nice spread.

To be honest, Max had to try them a couple of times before he actually ate a whole one. I think it was the seeds I had put on. He seemed to be much happier with just parmesan topping.

And cutting out little car, train and aeroplane shapes definitely helped.

Sweet Potato & Goats Cheese Pastries

Healthy family recipe for Sweet Potato Pastries
A Light supper, starter or snack.

Sweet potatoes don’t just taste nice but they are actually one of the healthiest vegetables out there.

Kids love them! Just make sure to use a mild cheese with this family recipe.

Apple & Banana Bran Muffins

Apple and Banana Muffin - Healthy dessert recipe
A muffin can’t get any healthier.

This one is really moist and it tastes great too. Honestly, we had it as an afternoon snack and again for breakfast... for 3 days!!

And everyone was happy.

Baked Potato Skins with Salmon

Family recipe for Baked Potato Skins with Salmon
Cheap and easy.

I didn’t have anything at home but potatoes, so I baked the potatoes while Max was having his nap.

Then we went out to get the other ingredients. If it has to go quickly you can just pop the potatoes in the microwave. This is a very quick and easy family meal that also looks very impressive.

All-in-One Roast Chicken & Mushroom Rice

Family recipe for roast chicken and mushroom rice
This is proper comfort family food.

Soft chicken with a lovely crusty skin and super tasty sticky rice, yummy! Don’t get put off by the amount of garlic that goes into it. You’ll be surprised how tasty it is.

We had it with brown rice this time. Use white rice if you don’t have time to  soak it overnight. Brown rice without soaking doesn't work.

Tuna, Spinach & Feta Strudel

A yummy recipe that I got from my friend Anna. Most ingredients you’ll probably already have at home. Just stock up on puff pastry and you’re ready to go.
