Salmon and spinach are a great combination and it couldn’t be any easier
to turn them into something delicious. Little enamel pie dishes are perfect for
children’s portions and will also give your meal a nice touch when cooking for
friends, however a larger dish works just as well.
Get the kids involved
helping you to decorate the pie. All you need is extra pastry and some cookie
cutters or knifes. Not sure if I should tell you this but I actually found our
fish shape in Max’s play dough tools.

I took these little eggy muffins to a picnic on our local playground last week. Max was too busy going down the slide that day; however the other children and their mums really seemed to enjoy them. They are easy to make and are great for breakfast, lunchboxes or party food. |

Blueberry Pie

Erich wants, Erich gets. This pie is the answer to the question “what shall I do with the blueberries in the freezer?” It was simply delicious. Max and I couldn’t even wait until it had cooled down and I could just about stop myself from getting the vanilla ice cream out. |

I’m not usually a fan of combining fish with cheese but in this case I think it really works. My boys really enjoyed this tasty mush but, of course, mash and broccoli could also be served separately if preferred. |

Vegetable Lasagne

The picture might not look as appealing but this lasagne really tastes very nice, you wouldn’t even miss the meat. I’ve chopped the vegetables really small so that my kids can’t pick them out and it worked! |

Upside-down Apple Tart (Tarte Tartin)

Oven-baked Spring Rolls

Wholemeal Pumpkin Seed Crackers
| A healthy snack. Enjoy on its own, with a slice of cheese or a nice spread. To be honest, Max had to try them a couple of times before he actually ate a whole one. I think it was the seeds I had put on. He seemed to be much happier with just parmesan topping. And cutting out little car, train and aeroplane shapes definitely helped. |

Baked Potato Skins with Salmon
| Cheap and easy. I didn’t have anything at home but potatoes, so I baked the potatoes while Max was having his nap. Then we went out to get the other ingredients. If it has to go quickly you can just pop the potatoes in the microwave. This is a very quick and easy family meal that also looks very impressive. |

All-in-One Roast Chicken & Mushroom Rice
| This is proper comfort family food. Soft chicken with a lovely crusty skin and super tasty sticky rice, yummy! Don’t get put off by the amount of garlic that goes into it. You’ll be surprised how tasty it is. We had it with brown rice this time. Use white rice if you don’t have time to soak it overnight. Brown rice without soaking doesn't work. |
