Smoked Paprika & Tomato Risotto

This is one of our favourites that Erich came up with. You’ll be surprised!




Portions: 2 adults + 2 children
Cooking time: 40 mins

What's in it: Peppers and tomatoes are rich in Vitamins C, B and K. They are also a good source of calcium, iron and iodine.
Ingredients:
  • 3 tablespoons of olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves
  • 2 peppers (1 red, 1 yellow), chopped in small cubes
  • 1 can of chopped tomatoes
  • 50 g tomato puree
  • 2 teaspoons paprika powder
  • 1 tsp mild smoked paprika powder (Pimenton)
  • 1 cup Arborio Risotto rice
  • 1-2 cups water
  • 1 generous hand-full of Parmesan cheese
  • Pinch of sugar, salt, pepper, cayenne pepper
  • Optional: 100 g Chorizo (1/3 of ring)
Preparation:
  1. In a large sauce pan, gently fry onions in olive oil until soft
  2. Add peppers and garlic, stir, then add rice followed by tomato puree and paprika powder
  3. Add chopped tomatoes and water and bring to the boil
  4. Season with salt, pepper, sugar and cayenne pepper (optional)
  5. Cover and simmer over very low heat for 15-20 mins, stirring occasionally (add more water if necessary)
  6. Stir in Parmesan cheese before serving.
Adult version: This risotto is lovely with pan-fried Chorizo on top. For 2 adults use about 100 g of Chorizo cut in 2 mm pieces. Don’t use oil for frying and dry the fried pieces on a sheet of kitchen paper before sprinkling over the risotto.

Suitable for re-heating and freezing.
