Wiener Schnitzel with RisiPeasi

An all-time favourite with kids and grown-ups. I admit, it’s a bit messy but definitely worth it!

Portions: 2 adults + 2 children
Cooking time: 40 mins

What's in it: This is a well balanced meal. Rapeseed oil is a good source of Omegas 3, 6 and 9 and has even lower saturated fat content than olive oil.
Ingredients:
  • 450g veal escallops (pork and turkey are equally nice)
  • ½ cup white flower
  • 1 cup natural breadcrumbs (e.g. Paxo)
  • 2 eggs
  • Salt, pepper
  • ½ cup rapeseed oil
  • 1 cup short grain rice
  • 1 carrot
  • ½ cup peas (fresh or frozen)
  • 1 tablespoon butter
  • 3 tablespoons Cranberry sauce
  • 1 lemon, sliced
Preparation:
  1. Put 1 cup rice in a sauce pan, add 2 cups of water, carrots, salt and bring to the boil. Cover and reduce to lowest heat, check from time to time.
  2. Prepare flour, bread crumbs and eggs in three separate bowls. Whisk eggs and add a pinch of salt and pepper.
  3. Cut some small pieces for your little ones and flatten the meat using a meat hammer; season with salt and pepper.
  4. Prepare a large frying pan adding rapeseed oil to cover the bottom of the pan. Preheat oven to 80ºC.
  5. Using a fork, batter each piece of meat starting with flour, then eggs and finally breadcrumbs. Use your hands for the breadcrumbs.
  6. Start frying the escallops in the pan, adding more oil if needed. Only use a medium heat to ensure that the oil doesn’t get too hot. Turn over the meat when golden brown.
  7. Transfer the meat from the pan to a plate in the oven to keep warm while frying the remaining escallops.
  8. To finish the rice, add peas and butter, stir, cover again and leave for a few minutes.
  9. Serve with a slice of lemon and cranberry sauce.
Adult version: Not much different really. I would maybe suggest a green salad as a side dish, and a nice glass of beer.
Any left-overs can be enjoyed cold for tea the next day; just put an escallop in a baguette with mustard, mayo and salad leaves.
