A muffin can’t get any healthier. This one is really moist and it tastes great too. Honestly, we had it as an afternoon snack and again for breakfast... for 3 days!! And everyone was happy. |
Portions: 12 muffins
Cooking time: 15 mins preparation + 30 mins baking
What's in it: Boosting your dietary fibre intake will help you maintain normal blood sugar levels and a healthy digestive system. Bananas, apples and raisins will make up for at least 1 of your five a day.
Ingredients:
- 2 large eggs
- 6 tablespoons honey
- 2 bananas, mashed with a folk
- 1 cup buttermilk (or 1 cup milk mixed with juice of ½ lemon)
- 1 tablespoon vanilla extract
- ¼ cup sunflower or rapeseed oil
- 1 cup wheat bran
- 1 cup wholegrain flour (I used spelt flour)
- 2/3 cup plain flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- Pinch of salt
- ½ cup apples, chopped into small cubes
- ¼ cup raisins, roughly chopped
Preparation:
- Whisk together eggs and honey until smooth. Add mashed bananas, buttermilk, vanilla extract, oil and wheat bran. Mix properly and set aside.
- In a large bowl mix all other dry ingredients; wholegrain flour, plain flour, baking powder, ground cinnamon and salt.
- Pour liquid mix into flour and mix together using a rubber spatula. Stir in apples and raisins.
- Scoop batter into prepared muffin cups and sprinkle with apple or banana pieces.
- Bake for about 20-30 minutes until golden brown. Test with a toothpick, they’ll be ready if it comes out clean.
- Let cool in the muffin tray for about 5 minutes, then place on a wire rack to cool before serving.
Suitable for freezing. The muffins can be kept in an airtight container for up to 4 days.
After 2 days, I’d recommend placing them in the oven for a few minutes before serving.
