Celeriac & Apple Soup

Apple and Celeriac Soup - A Healthy Family Recipe
I’m not a huge fan of celeriac and to be honest, I usually only buy it if I need it for stock or a stew.

But this is actually a really lovely soup that could be served in a restaurant. I think Max loved it because of the sweet taste from the apple.



Portions: 2 adults + 2 children
Cooking time: 30 minutes

What's in it: Celeriac is rich in minerals, B-complex vitamins, and dietary fibre. It’s a very good source of Vitamin K. Vitamin K is needed to build strong bones and blood clotting, which helps wounds heal properly. Dairy and bread add calcium and carbs, which makes this a perfectly balanced light lunch, supper or starter.

Ingredients:
  • 1 whole celeriac (about 300g), cut in 1cm cubes
  • 1 cooking apple, cut in 1 cm cubes
  • 15g butter
  • 500ml vegetable stock (from cube/granules)
  • 100ml double cream
  • Salt, white pepper
  • Fresh bread, ideally walnut bread
  • Dried apples, walnuts, parsley and pancetta cut into small cubes for decoration
    (any or all of it)

Preparation:
  1. Melt butter in a large saucepan and gently fry celeriac and apple pieces only for a couple of minutes. They should not turn brown.
  2. Add vegetable stock and double cream. Season with salt and pepper. Gently simmer for about 20 minutes or until celeriac is soft enough to blitz.
  3. In a small frying pan, quickly fry dried apples, walnuts and pancetta with a teaspoon of olive oil.
  4. Blitz the soup with hand blender until smooth. If you don’t have the time you could serve the soup now.
  5. For a much smoother texture without bits, pour soup through a fine sieve and squash through with a rubber spatula until only about 3 tablespoon of fairly dry celeriac mash are left. (Try to get as much liquid out as possible in order to keep the nutrients in the soup)
  6. Quickly re-heat the soup , pour into a soup bowl and sprinkle with fried mix and chopped parsley. Serve with a slice of fresh bread.

Adult version: I put in 100ml of cider and a pinch of cayenne pepper. It tastes amazing.

Suitable for freezing and re-heating.
