Apple & Buttermilk Pancakes


If breakfast, snack or dinner, delicious pancakes with a glass of milk are always a great sweet but nutritious treat!

Bump is quite big now and with only two weeks to go I'll have to try relax a bit and let grandma take care of the cooking. So watch the space for grannies favourites. I'm looking forward to it!



Portions: 2 adults + 2 children
Cooking time: 25 minutes

What's in it: : Eggs are a good source of protein and giving your body energy. Buttermilk is high in calcium, protein and B vitamins while apples add important vitamins.

Ingredients:
  • 1 carton buttermilk
  • 2 eggs
  • 1 cup plain flour (or white spelt flour)
  • 2 apples, peeled and cut into small cubes>
  • 3 tablespoons icing sugar
  • Optional: cinnamon and raisins

Preparation:
  1. Mix together flour and buttermilk until you get a smooth batter without lumps.
  2. Add eggs and sugar and whisk again.
  3. Optional: season apples with cinnamon.
  4. Add eggs (and raisins) to the mixture.
  5. In a large frying pan, heat enough butter to cover the base.
  6. For each pancake drop 1 or 2 spoonfuls of batter onto the frying pan.
  7. Spread evenly and fry over a low-medium heat until golden brown. Then flip over.
  8. Serve hot with apple sauce or just sprinkled icing sugar.
