Everyone loves meatballs. Here’s a great recipe for smuggling in some vitamins for your little ones. This time we had them with mashed potatoes but they are also great with rice or oven chips. |
Portions: 2 adults + 2 children
Cooking time: 45 minutes
What's in it: Being rich in fiber, protein and Vitamin B, mushrooms help to maintain a healthy metabolism. They are also rich in potassium and copper, a mineral that has cardio-protective properties. Parsley is a rich source of anti-oxidant nutrients, Vitamin C, Vitamin A and Beta-Carotene. Meat provides iron, making this a well balanced and healthy family meal.
Ingredients:
- 500g minced meat (pork and/or beef)
- 2 slices of stale toast (or 1 stale bread role)
- 500g mushrooms, sliced
- ½ onion, finely chopped
- 1 handful parsley, finely chopped
- 1 teaspoon tomato puree
- 1 egg
- 1 teaspoon mild paprika powder
- Salt and pepper
- ½ leek
- 2 tablespoons crème fraȋche
Preparation:
- Soak stale bread in milk until milk is absorbed, then squeeze out with your hands.
- In a large bowl, mix together minced meat, bread, onions, parsley, tomato puree, egg, paprika powder, salt and pepper.
- Finely chop 8 mushrooms and add to the mixture.
- Use your hands to mix the ingredients properly and form small meat balls.
- Fry meatballs in a few drops of rapeseed oil. Place in an ovenproof dish and keep warm in the oven.
- Add leeks and sliced mushrooms to the remaining oil in the pan and fry until soft.
- Add 2 tablespoons of water, crème fraȋche and parsley. Season with salt and pepper.
- Serve meatballs with mushroom sauce and mashed potatoes.
