Chicken & Aubergine Ragout with Couscous

Family Recipe for Chicken and Aubergine Ragout
I just love aubergines, especially when they are all sloppy. This lovely ragout can be served over pasta, baked potatoes or, like I did it this time, with couscous.

The raisins add some sweetness, which kids will love. Well, Max definitely did! 



Portions: 2 adults + 2 children
Cooking time: 40 minutes

What's in it: This lovely family meal will provide you with good amounts of protein, dietary fibre, potassium, heart-healthy copper and vitamin C.  Aubergines are an excellent source of manganese and vitamin K, which helps building strong bones.

Ingredients:
  • 4 chicken thighs, cut into small pieces
  • 2 medium-sized aubergines
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 1 tin chopped tomatoes
  • 2 tablespoons raisins or sultanas
  • Salt, pepper, 2 tablespoons Garam Masala
  • 1 handful fresh parsley, chopped
  • Juice of ½ lemon

Preparation:
  1. Cut Aubergines into chunks, place in a colander and sprinkle with plenty of salt.
  2. Preheat oven to 200ºC.  Cut chicken thighs and chop onions and garlic while aubergines are resting (for at least 15 minutes)
  3. Rinse aubergines in cold water, pat dry with kitchen paper and place on a baking tray. Sprinkle with some olive oil and bake in the oven until soft.
  4. Meanwhile, start frying onions and garlic in a large sauce pan until soft. Add chicken and season with salt, pepper and Garam Masala.
  5. When chicken is slightly browned, add chopped tomatoes followed by the baked aubergines and raisins.
  6. Cook gently for about 15-20 minutes. Add chopped parsley and lemon juice just before serving
  7. Serve with couscous.

Adult version: Add some chillies, cayenne pepper or Tabasco to spice things up. Replace parley with fresh coriander.

Variation: Can also be cooked with lamb but it will take longer to cook.

Suitable for freezing and re-heating.
