Quick Ebly and Vegetable Stir-fry

Durum Wheat Stir-Fry - A healthy family meal
The perfect dish for sunny days.

Ebly is a brand name for Durum Wheat. You can buy it from Waitrose or Ocado. It looks like pearl barley but actually tastes more like pasta.

Ebly takes only 10 minutes to cook and contains more nutrients than pasta. It’s simply great and kids love it!




Portions: 2 adults + 2 children
Cooking time: 20 minutes

What's in it: Like pasta, which is made from durum wheat, Ebly is a good source of dietary fibre and vitamins; however more of the good nutrients are preserved during preparation. A wide colour range of vegetables make this a very summery and healthy family meal giving you enough energy for an active day.

Ingredients:
  • 1 ½ cups Ebly
  • 3 cups water
  • ½ onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 medium sized courgette, cut into bite size pieces
  • 1 small tin of sweet corn (or ½ cup frozen)
  • 1 red pepper, cut into bite size pieces
  • 1 handful parsley, chopped
  • Salt, pepper, vegetable stock cube
  • Optional: peas, mushrooms, tomatoes etc.


Preparation:
  1. Fry onions and garlic with 1 tablespoons of olive oil.
  2. Add all other vegetables and gently fry for 3 minutes.
  3. Add Ebly and water. Season with salt, pepper and vegetable stock cube/granules.
  4. Simmer gently for about 10 minutes until the wheat has absorbed the liquid.
  5. Add parsley and serve.

Adult version: Can be enjoyed cold. Just add a bit of olive oil, lemon juice, tomatoes and cucumbers and you'll have a lovely summer salad.

Variation: For a more substantial meal add some diced chicken fillets when frying the vegetables.
This is also a great side dish for grilled meats.

Suitable for re-heating. Freezing not recommended.
