A great summer dessert. I just had to grab one of those super sweet pineapples. Of course, it would have been delicious on its own but I was just in the mood for something a bit more exciting. And it’s super healthy too! |
Portions: 4-6 desserts
Cooking time: 20 minutes
What's in it: This lovely healthy dessert makes up for one serving of dairy providing protein, calcium and magnesium. Pineapple is an excellent source of vitamin C helping your body to absorb important minerals.
Ingredients:
- 500g fromage frais
- Juice of 1 lime
- 2 tablespoons honey
- mint leaves, finely chopped
- 1 pineapple, cut into small cubes
- 1 pack sponge fingers (lady fingers)
- Keep a few pineapple pieces and mint leaves for decoration
- Mix all ingredients in a large bowl.
- Prepare some nice glasses or bowls.
- Put a few sponge fingers at the bottom of each bowl and pour over the mixture. Create layers if your bowls are big enough.
- Decorate top with pineapple pieces and mint leaves.
- Refrigerate until being served.
Adult version: Haven’t tried it out but I can imagine this being quite nice with a hint of rum.
