I love Ottolenghi! Just had to give this recipe a try and we liked it so much that I decided to publish it on my blog. Only I tweaked it slightly by baking the sweet potato wedges in the oven; it should be a healthy family meal after all. |
Portions: 2 adults + 2 children
Cooking time: 30 minutes
What's in it: Fish is a good source of protein and omega 3 fats. However, it’s the sweet potatoes that make this a truly healthy family meal. They are a great source of beta carotene and Vitamin A and C, which are the most important components in a healthy child’s diet. By the way, it's important to have some fat with your sweet potato if you want to enjoy the full beta-carotene benefits of this root vegetable. So this is the perfect combination.
Ingredients:
- 3-4 sweet potatoes, cut into wedges
- 600g haddock fillet, cut into small pieces
- 100g flour
- 200ml lager (I use alcohol free beer)
- ½ teaspoon soda (or baking powder)
- 1 teaspoon black onion or black sesame seeds
- Salt, white pepper
- Slices of lemon, tartar sauce
- Preheat oven to 200ºC.
- Quickly marinate sweet potato wedges with a bit of olive oil and salt (I use a large freezing bag for this). Spread evenly on a tray lined with baking paper and pop into the oven.
- For the fish batter, mix flour, soda, salt, pepper, onion seeds and lager in a bowl (in this order). Whisk using a folk until you get a smooth mixture.
- Pour plenty of sunflower oil in a large sauce pan and place over medium heat.
- Season fish pieces with salt and white pepper and dust with flour.
- In batches, dip fish pieces into batter, they fry in oil until golden brown. This should only take 2 minutes per batch. Drain on kitchen paper.
- Serve fish and chips immediately with a slice of lemon and tartar sauce.
Adult version: Add chilli flakes to the batter to spice it up a little bit.
Not suitable for freezing and re-heating.
