Veal & Carrot Ragout

Veal has a subtle flavour and fine texture, which makes it perfect for family meals right from the beginning.

Add carrots, sage, parsley and white wine and you’ll get an amazing pasta sauce. I’ve already stocked up my freezer.



Portions: 2 adults + 2 children
Cooking time: 40 minutes

What's in it: Veal is a very lean meat that is tender and easy to digest. It’s an excellent source of protein, and a good source of niacin, zinc, and B vitamins. Combined with carrots and herbs this is a healthy family recipe low in fat and rich in vitamins and antioxidants.

Ingredients:
  • 500g minced veal (or turkey)
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 2 carrots, cut into tiny cubes
  • ½ glass dry white wine (optional)
  • 1 glass chicken stock water ( use granules or stock cubes)
  • ½ bunch sage, finely chopped
  • ½ bunch parsley, finely chopped
  • Zest of 1 lemon
  • 1 tablespoon crème fraȋche
  • Salt, white pepper

Preparation:
  1. Start by frying the chopped onions and garlic in a few drops of rapeseed oil. Add minced veal and continue to fry for a few minutes.
  2. Add carrots, stir quickly and then pour over white wine and chicken stock. Season with salt and pepper and simmer gently for 20 minutes.
  3. Add fresh sage, parley and lemon zest and finish off with a tablespoon of crème fraȋche.
  4. Serve over freshly cooked pasta shapes. I used Orechiette this time.

Alternatives: If you can’t get hold of minced veal you can replace it with turkey.

Suitable for freezing and re-heating.
