Kedgeree - Smoked Fish Rice


I’m not quite sure whether this recipe is Indian or British but we like it.

It’s basically a mild curry rice with smoked haddock, parsley and boiled eggs, with some vegetables smuggled in. A very tasty and healthy family meal.



Portions: 2 adults + 2 children
Cooking time: 40 minutes

What's in it: This a very nutritious meal. Very high in protein Kedgeree also provides you with important vitamins and minerals.

Ingredients:
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 300-400g smoked haddock (preferably undyed)
  • 3 tablespoons butter
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 teaspoon turmeric
  • ½ teaspoon of cumin
  • ½ teaspoon of mild curry powder
  • ½ teaspoon of fennel seeds
  • 200ml milk
  • 1 cup basmati rice
  • Handful fresh parsley, finely chopped
  • 3 eggs, hardboiled and quartered
  • Salt, pepper, and a pinch of vegetable stock granules
     
Preparation:
  1. In a large sauce pan, bring 300ml water to the boil. Add chopped carrot and celery. Simmer for 10 mins. 
  2. Place haddock fillet in the infused water and remove from the heat.
  3. Cook rice according to packet instructions, cover and set aside until needed.
  4. To make the sauce, gently fry onion and garlic until soft and add all spices. 
  5. Add fish cooking liquid (with vegetables if you like) and 200ml milk. Simmer until reduced to a nice, slightly thicker sauce.
  6. Flake fish and stir into the sauce with rice and parsley. 
  7. Serve with hard-boiled eggs on top and mango chutney.





Variation: Try adding raisins for a more sweet & sour taste.

Not suitable for freezing.
