Best Ever Mushy Pea Risotto

Family recipe for Pea Risotto
While I was cooking it, Max sat on the work top munching parmesan and goats cheese. I didn’t even know he liked it! It got quite messy when he then started stirring the puréed peas and put a spoonful in his mouth, or should I say face?

Anyway, it was fun, only took 30 minutes and was simply delicious! 



Portions: 2 adults + 2 children
Cooking time: 30 minutes

What's in it: Peas are great! They add muscle-building protein and heart-healthy fibre to your meal. They are a good source of immune-supportive vitamin C , bone-building vitamin K and manganese, and energy-producing iron, potassium, copper and magnesium . Combined with rice and dairy, this makes a perfectly balanced family meal.

Ingredients:
  • 1 ½ cups risotto rice
  • 1 ½ cups frozen peas
  • 2 handful pea shoots (about 40 grams)
  • 100ml double cream
  • ½ onion, finely chopped
  • 1 garlic clove, finely chopped
  • 2-3 cups vegetable or chicken stock
  • Zest of ½ lemon
  • Salt, pepper
  • 1 handful parmesan cheese
  • 50g hard mild goats cheese
  • More pea shoots for decoration.

Preparation:
  1. Start making a plain risotto by gently sweating onions and garlic in a few drops of olive oil
  2. Add risotto rice followed by 2 cups of vegetable stock and season with salt, pepper and lemon
  3. Simmer gently and stir occasionally. Add more stock if rice has absorbed liquids.
  4. In a separate saucepan, heat 100ml double cream, add frozen peas and simmer gently for only a few minutes until peas are soft. Set aside, mix in pea shoots and purée with a hand blender.
  5. Just before the rice is cooked, add the green mix and parmesan to the risotto. Only cook for a few more minutes to avoid losing the lovely green colour.
  6. Serve as soon as possible in a deep plate and sprinkle with goats cheese and pea shoots.

Alternatives: If you can't get hold of pea shoots, you could use spinach leaves, watercress or rocket instead.
Variation: This would also be a lovely side dish for salmon or steak.

Suitable for freezing and re-heating.
