Green Asparagus Omelette

Spanish omelette my way.

An omelette is a quick and easy way out if you don’t know what to cook, assuming you’ve got potatoes and eggs in your fridge.

With asparagus being in season this is a quick and easy idea for lunch or dinner after a busy day out.



Portions: 2 adults + 2 children
Cooking time: 25 minutes

What's in it: Eggs are a good source of protein and giving your body energy. Asparagus is an excellent source of vitamin K, folate, vitamin B1, vitamin C, and vitamin A (in the form of beta-carotene) and copper. It's a very good source of energy-producing vitamin B2, and B3, potassium, vitamin B6 and dietary fiber, vitamin E and manganese. Asparagus has great health benefits including anti-inflammatory, antioxidant-promoting and bone-building effects.

Ingredients:
  • 2 large potatoes
  • 1 small bunch green asparagus, stems removed and peeled at the bottom (to avoid dry bits)
  • 5 eggs  (I use Burford Brown from Waitrose, they have very yellow yolks)
  • 1 handful medium cheddar cheese
  • Salt, pepper, paprika powder
  • Good quality olive oil

Preparation:
  1. Slice potatoes and gently fry them in a few tablespoons of olive oil until soft but not too brown. Season with salt and move onto a plate and set aside.
  2. Using the same pan, gently fry asparagus until soft. Remove from pan and set aside
  3. Whisk eggs until you get a very smooth mixture. Season with salt and pepper.
  4. Preheat oven to 100ºC .
  5. In a deep frying pan, bring three tablespoons of olive oil to a medium heat. Pour in just a little bit of the eggs to cover the bottom.
  6. Now layer potato slices followed by asparagus and pour in the remaining egg mixture. Sprinkle with cheese.
  7. Fry over a low heat until omelette is starting to turn solid. Cover pan with a plate, flip over the omelette onto the plate and move back into the pan.
  8. Continue to fry on the hob for a few more minutes before placing the pan into the oven to finish and keep warm.
  9. Serve with fresh herbs on top and a side salad and maybe some soured cream.

Enjoy hot or cold. Can be re-heat in the oven or microwave.
Freezing not recommended
