Courgette Pasta Carbonara

Courgette Pasta Carbonara - Quick and Simple Family Recipe
Quick and simply delicious.

I’ve always loved spaghetti carbonara and to be honest, courgette is just as nice as bacon with this lovely creamy sauce.

Kids love pasta, egg and cheese, so mixing it together and hide some veg in it seems like a good idea.




Portions: 2 adults + 2 children
Cooking time: 20 minutes

What's in it: : Eggs are a good source of protein and zinc while dairy contains calcium and other important minerals that are essential for healthy bones. A good amount of Vitamin C helps your body to absorb iron and calcium.

Ingredients:
  • 250g Pasta (or a bit more for hungry parents)
  • 3 tablespoons olive oil
  • 1 garlic clove
  • ½ onion, finely chopped
  • 2 medium sized courgettes, coarsely grated (make sure you use fresh courgettes to avoid bitter taste)
  • 2 eggs
  • ½ cup milk
  • 3 tablespoons crème fraȋche
  • 1 handful parmesan cheese, grated
  • 1 handful of fresh basil, chopped

Preparation:
  1. Cook Spaghetti according to pack instructions
  2. Gently fry onions and garlic in a large frying pan. Add grated courgettes and sauté for a few minutes until soft.
  3. Mix together milk, eggs, crème fraȋche and parmesan cheese.
  4. Drain pasta and add to the courgettes, mix well before adding the egg mixture together with chopped basil.
  5. Take off the heat and mix well until you get a nice creamy texture.
  6. Sprinkle with fresh basil and parmesan cheese and serve immediately.

For Dads:  If daddy is a meat person, you could smuggle in some pancetta.


Suitable for freezing and re-heating.
