Peanut Butter Beef Stew

Peanut Butter Beef Stew - Healthy Family Recipes
My friend Betty sent me one of her favourite family recipes.

It’s a lovely beef stew using every kid’s (and grown up kid’s) favourite sandwich filling, peanut butter.

We all loved it, you must try this!


Portions: 2 adults + 2 children
Cooking time: 15 mins preparation + 1 ½ hrs cooking

What's in it: I didn’t know this but peanuts actually offer a variety of health benefits. They are a very good source of heart-healthy monounsaturated fats. In addition, peanuts are a good source of niacin, folic acid, copper, manganese, and protein.

Ingredients:
  • 800g quality braising steak
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • Salt, pepper, chilli
  • 400g tinned chopped tomatoes
  • ½ litre water
  • 100g peanut butter (preferably 100% peanuts)

Preparation:
  1. Season meat with salt and pepper.
  2. Heat 3 tablespoons of olive oil in a large sauce pan and fry meat until brown and remove from the pan.
  3. In the same pan, with a bit more oil fry chopped onions gently until soft. Add garlic, chopped tomatoes and water and season with salt.
  4. Cook for 10 minutes, then blend using a hand blender.
  5. Place meat back into the pan, cover and simmer gently for 1 hour until meat is soft.
  6. Stir in peanut butter and continue to cook for 5 minutes to get a really nice thick sauce.
  7. Serve with rice or couscous and vegetables such as broccoli, red peppers or spinach leaves.

Adult version: Add chillies or Tabasco sauce to spice things up.

Suitable for freezing and re-heating.
